1/2 cup flour
3 teaspoons salt
1 teaspoon black pepper
4 chicken cutlets
2 tablespoons vegetable oil
2 tablespoons white vinegar
1 teaspoon minced garlic
1/2 cup chicken broth
2 tablespoons fresh lemon juice
2 tablespoons fresh capers
2 tablespoons unsalted butter
Fresh lemon slices
Fresh parsley, chopped
12 ounces cooked angel hair pasta
*Combine the flour, salt and pepper in a shallow bowl. Dredge the chicken cutlets in the flour mixture.
*Heat the vegetable oil in a saute pan over medium-high heat. Saute the cutlet 2 to 3 minutes on each side. Transfer to a warm plate.
*Deglaze the pan with the vinegar and 2 tablespoons of water. Add the minced garlic. Cook until the garlic is slightly brown, about 3 minutes. Add the broth, lemon juice, and capes. Return the cutlets to the pan and cook on each side for 1 to 2 minutes. Transfer the cutlets to a warm plate.
*Add the butter and lemons to the saute pan to finish the sauce. Once the butter is melted, pour the sauce over the cutlets and garnish with lemon slices and chopped fresh parsley. Serve over angel hair pasta.
Surrounded by his extended family, grandparents Bonnie and Wally Landes, Bill and Jeanie Collier, Aunt Kendra Landes, and his parents Matt and Leah, Benjamin was dedicated to the Lord on Sunday, January 12, 2014. Representing the church was pastor Chris who officiated the service, children’s ministry coordinator Debbie Seidel who presented a baby-Bible, and deacon Jane Meadows representing the support of the congregation. Benjamin was born July 5, 2013, and seemed to thoroughly enjoy the service with a quick and genuine smile, legs and arms enthusiastically engaged, and showing genuine interest in the congregation.
After many years of faithful leadership and service Bob and Carolyn Seidel retired December 31, 2013 from the Deacon Body of the Oakton Church of the Brethren. During the Oakton Church worship service on Sunday, January 12, expressions of appreciation were shared for Bob and Carolyn’s years of service with the deacons where they had several duties including, most recently, vice-chair, chair, and secretary. The recognition
service ended in a standing ovation and a beautiful vase of roses was placed on the worship table in their honor. The Seidels have served in various capacities of service and leadership at Oakton Church where Bob currently holds our highest elected office as our Moderator. Bob and Carolyn will also continue to make communion bread, play in the bell choir, and manage the Joys and Concerns list. Thank you Bob and Carolyn.
