Ron McAdams has made hundreds of these pies. He has special ovens that help him bake eighteen pies at a time. The pies are sold to help support church activities, service projects, and mission trips. He is famous in the Southern Ohio District for his delicious pecan pies.
Serves 8
PIECRUST
1 cup flour
1/2 teaspoon salt 1/3 cup canola oil
FILLING
1 cup chopped pecans
3 eggs
1/2 cup cane sugar
1 cup white corn syrup
1/4 cup (1/2 stick) butter, melted
Dash of salt
1/4 teaspoon vanilla
*Preheat the oven to 350 degrees F.
*To make the piecrust, combine the flour, sale, oil, and 1 tablespoon ice water and mix until the dough gathers together and pulls away from the bowl, about 2 minutes. With your hands form the dough into a ball.
*Roll the dough into a 10-inch circle. An easy way to roll pastry dough is between two sheets of wax paper. Sprinkle a little water on your work surface first to keep the wax paper from sliding around.
*Place the dough in a 9-inch pie pan and press into the bottom and up the sides. Trim and crimp the edges.
*To make the filling, fill the piecrust with the pecans.
*With an electric mixer beat the eggs, sugar, syrup, butter, salt, and vanilla on medium speed. Pour over the pecans in the piecrust.
*Bake for 50 minutes or until the pie is firm.

Lincoln Cory
Lincoln Cory’s interest in cooking began as a young boy in his mother’s kitchen. He talks about her with great fondness. “Mother was a very peaceful woman with a lot of spunk. She was a big bread-baker. I can still hear her telling me, ‘Lincoln, you’ll spoil your dinner if you have two slices of bread.’ Sometimes I’d get lucky and have a third piece with dinner,” Lincoln says with a bit of ‘that same spunk’ in his voice.
“I attended high school in Rindge, New Hampshire, at The Meeting School, where I worked two-week shifts, along with a partner, making breakfast and dinner for our fellow classmates. These years were a very special time in my life and I look back on them with a lot of enjoyment. I think this is where my love of cooking really took off.
“I’m always trying to keep foods healthy and I like to cook things just rights,” says Lincoln, a retired licensed practical nurse of 25 years. Lincoln and his wife Carol married nine years ago this past October. “Our wedding was very special and one of the high points in my life,”
Lincoln and Carol enjoy their home in Vienna, Virginia. “We have a charming bay window in our living room which is the perfect setting for our Christmas tree. We select a fresh tree and Carol adds her special touches to make it shine.
“Christmas has always been a nice time for me,” says Lincoln. “I remember a tree lit with real candles when I was a young boy. My family sat back in the darkened room, just gazing at the tree. It was so beautiful and I think that was one of the best trees I’ve ever had.
“I like the parties during the holidays,” Lincoln says. “We spend one day during the Christmas season with Carol’s family where we enjoy her little nieces who are so excited, they just can’t sit still. We also like to have our friends over for tea and all our favorite holiday treats.
“I’m quite involved with my church and help with the food pantries, soup kitchen and the angel Christmas tree. It made Carol and I feel good to give a coat to someone in need who I’m sure was very appreciative..”
Carol tells us, “Many years ago I made mini-breads as part of a Christmas present to my co-workers. Well, no one really mentioned much about the breads, so I didn’t make them the following year and that’s when someone wondered, ‘Where are the breads?’ So now I’m sure to make them every Christmas just as I have for almost 20 years.”
Lincoln and Carol enjoy spending a quiet Christmas together, just the two of them. “We hang our stockings filled with all kinds of little surprises inside. One year my gift for Carol was too big to fit in the sticking to I tied a ribbon from the stocking to her gift for her surprise. We have a lot of fun together!”
Carol recalls a Christmas past when, “Lincoln surprised me with a very thoughtful gift. He took old pictures which were falling apart and had them repaired and framed in a beautiful setting. It’s a gift I cherish and have hanging in our living room.”
Sometimes ‘Santa’ just can’t wait for Christmas to present that special little something so he makes his appearance during the year, but Lincoln assures us, “There’s always a surprise on Christmas morning!”
