Recipe of the Month – Pretzel-Strawberry Salad

My mother, Susie Myers, described this recipe as super-duper! It can be used as a dessert or a salad.

Serves 12

2 cups crushed pretzels
¾ cup butter, melted
3 tablespoons sugar
1 (8-ounce) package cream cheese, softened
1 cup sugar
8 ounces frozen whipped topping, thawed
1 (6-ounce) package strawberry gelatin
2 (10-ounce) packages frozen strawberries, thawed

*Preheat the oven to 350 degrees.

*Mix the pretzels, butter, and sugar (3 tablespoons) together. Press into a 13×9 inch pan. Bake for 10 minutes and then let cool.

*Mix the softened cream cheese and sugar (1 cup) together and the nfold in the whipped topping. Spread over the cooled crust and chill.

*Bring 3 cups water to a boil in a saucepan over medium-high heat. Add the gelatin powder and stir until dissolved. Remove from the heat and let the mixture cool to room temperature, and 15 minutes. Add the strawberries to the liquid gelatin.

*When the mixture begins to set, pour over the cream cheese layer. Refrigerate until firm, about 1 hour.

Brethren Nutrition Program – Request for Help

As many of you know, many dedicated folks have been working to rebuild Washington City COB’s soup kitchen, the Brethren Nutrition Program.  Soon, a full time Food Ministries Coordinator will be hired to start in July (an announcement about the new hire will be out soon).

At this time, the the Brethren Nutrition Program’s office is being revamped into a usable working space for the new Food Ministries Coordinator and the Brethren Volunteer Service worker.

As the update moves forward, there are several specific needs:

  • desktop PC or laptop
  • window air conditioner (room is roughly 22′ x 23′)
  • a desk
  • desk chair
  • small conference table
  • at least 4 padded chairs to use at the table
  • office supplies (legal size envelopes, copy paper, pens, stamps, tape, stapler, scissors, other desk accessories)

If there is anything on the list you can help with, please contact the Brethren Nutrition Program directly. Gently used items would be highly welcome and pickup can be arranged in the DC area.  If you have available items and they are somewhat beyond the DC area, please email and we can see if pickup could be possible.

Tea, Food and Fellowship for All

The Ladies’ Afternoon Tea on Sunday, May 4, was a relaxing afternoon of delicious food, pleasant fellowship, and terrific entertainment that was enjoyed by everyone.  Immediately following the blessing, our handsome and attentive waiters began serving tea and a scrumptious lunch of tea sandwiches, fruit, cookies, fudge, and other desserts.  In addition to sipping tea and savoring every bite of our food, conversation and laughter were also on the menu as we enjoyed this special time of fellowship.

Kimberly Judd read “A Little Cup of Tea” and gave the blessing. After lunch, the “Brethren Belles Ensemble” – Sherry Bowman, Kim Ferrari, Debbie Herring, Jerry Anne Kines, Anne Kosek and Carolyn Strong – graced the group with a number of beautifully played songs. Kim Ferrari closed the event with a benediction titled, “A Loving Recipe for a Perfect Cup of Tea”.

This event would not be successful without the wonderful men who treated us royally and received a standing ovation for their efforts.  Our sincere appreciation to head waiter Kenny Judd and waiters Joel Comer, Eric Finet, Luke Finet, Landon and Miller Kines, Orville Knicely, Lou Levesque, Bobby Schultz, Bob Seidel, and Evan, Jeff and Seth Strong for keeping our teacups filled, serving lunch, and leaving the kitchen spotless.  You took excellent care of us and your hard work was much appreciated.

It was a nice day for all and we appreciate all of the behind-the-scenes work that goes into an event like this.  A huge thanks to Sherry Bowman, Kim Ferrari, Debbie Herring, Mary Ellen Judd, Michelle Kessler, Bev and Lou Levesque, Pat Reed, and Evelyn Supinger for preparing food, setting up tables, and decorating the room.

 

VMJ Celebration Breakfast June 8 – 9:45am

VMJSince launching our Vital Ministry Journey (VMJ) in March, twelve Bible study groups at Oakton have been meeting to study the Bible and to share about their vision for our church. Now it’s time for us to get together to share across our groups the insights we’ve learned through this important process.

Please join us for a carry-in breakfast in the Fellowship Hall on June 8 to celebrate the success of our VMJ Bible study groups. Even if you have not been involved in a group, we urge you to come to the breakfast and share in the discussion.

Fairfax Saxophone Quartet Performs “Sort of Greek” Concert – June 21

The Fairfax Saxophone Quartet will showcase its crowd-pleasing versatility at a free performance at Oakton Church of the Brethren on Saturday, June 21 at 7 p.m.  The hour and a half program, entitled “Sort of Greek,” will include the music of Nikolai Rimsky-Korsakov, Mikis Theodorakis, Manos Hadzidakis, Pedro Iturralde, and other delightful selections and will feature guest artist Amy LaCivita on piano.  James Francis, Stanley Shelton, Brian Cole and Laura Chubb comprise the Fairfax Saxophone Quartet, which is now in its 30th year.  Throughout the Washington area and beyond,  the Fairfax Saxophone Quartet plays year-round as “Ambassadors of Good Will” for the highly acclaimed City of Fairfax Band.

No tickets or reservations are required for this free concert.  Donations will be accepted for the outreach programs of Oakton Church of the Brethren.
